This homemade lemongrass ginger tea is a simple herbal tea made with fresh ginger, fragrant lemongrass, and a little honey. Great hot for comforting evenings, or poured over ice for an iced tea.

About this ginger lemongrass tea

Ginger lemongrass tea is made by simmering fresh ginger and lemongrass in water, then straining it and sweetening it with honey. The ginger gives it a warm, slightly spicy flavor, while lemongrass keeps it fresh and citrusy.

It’s really an herbal infusion rather than a true tea since there’s no tea leaf in it. That also means it’s naturally caffeine-free, so you can enjoy it any time of day.

If you enjoy the ginger and lemongrass flavor but want some caffeine, add one black tea bag while the ginger and lemongrass are simmering. Remove it after a few minutes so it doesn’t become too bitter.

Ingredient notes & substitutes

You can find everything at Asian grocery stores or markets. Head to the recipe card at the bottom of this post for the exact measurements.

  • Honey: Start with a small amount and add more to taste. You can also leave it unsweetened.
  • Lemongrass: Lightly crush the stalk with the side of a knife before adding it to the pot. I’ve found this helps release more of that fresh lemongrass aroma.
  • Ginger: You don’t need to peel the ginger. Just give it a quick rinse, slice it, and into the pot it goes.
  • Water: Keep in mind that some water will evaporate while the tea simmers, which is why I use more than the exact amount I’d want in the finished glass.

This recipe also makes a really nice iced herbal tea. For iced ginger lemongrass tea, make the tea as usual and let it cool completely. Pour it over a glass filled with ice and add a little more honey if needed.

How to make lemongrass and ginger tea

1: Prepare the ginger and lemongrass. Roughly slice the fresh ginger. Trim the lemongrass stalk and lightly crush it with the side of a knife.

2: Simmer the tea. Add the ginger, lemongrass, and water to a small saucepan. Bring to a gentle simmer and cook for about 10 minutes. Simmering gives the ginger and lemongrass enough time to infuse into the water.

3: Strain and sweeten. Strain the tea into a glass or mug, removing the ginger and lemongrass. Let it sit for a minute or two, then stir in the honey to taste.

How to store

Strain out the lemongrass and ginger before storing. Let the tea cool completely and keep it in a covered container in the refrigerator. Reheat it gently on the stove or in the microwave until warm, or pour it over ice for a cold drink.

I recommend adding the honey when you’re ready to drink it rather than sweetening a large batch.
