Say no to food waste!
In Thailand, we make sure no food goes to waste—and this refreshing pineapple drink is a perfect example! It transforms leftover pineapple skin and core into a delicious, healthy tea, giving new life to parts of the fruit you’d normally throw away.
P.S. Don’t toss the pineapple top either! Plant it in soil, and you’ll be on your way to growing your very own pineapple plant.
You’ll love this recipe because it’s easy to make, incredibly tasty, and great for meal prep. Brew a big batch, store it in the fridge, and enjoy it all week long!
Serve it warm with a drizzle of honey, or over ice for a refreshing drink. Either way, it’s absolutely yummy!
Ingredient notes
You can find everything you need at Asian markets or Asian grocery stores. Head to the recipe card at the bottom of this post for all the measurements!
- Pineapple core – The tough inner part of the fruit brings a subtle sweetness and an extra boost of pineapple flavor to the tea.
- Pineapple skin – The outer peel adds a tangy, fruity note and a natural tropical aroma.
- Cinnamon stick – Releases a warm, earthy spice that balances the tea’s fruity notes.
- Ginger – Adds a spicy, zesty kick and soothing properties.
- Water – Serves as the base of the tea and extracts the flavors from all the ingredients.
- Honey (optional) – Sweetens the tea naturally.
How to make pineapple tea
Step 1: Bring water to a boil over medium heat. Add the pineapple skin, pineapple center, cinnamon stick, and ginger. Let it simmer for about 15 minutes until the flavors infuse.
Step 2: Carefully strain the tea through a fine mesh sieve.
Step 3: Transfer the strained pineapple ginger tea to a teapot. For extra presentation and flavor, you can add a few pieces of pineapple skin back to the teapot. Optionally stir in a few tablespoons of honey. Serve hot or cold and enjoy!
Storage and reheating tips
- Refrigerate: Allow the tea to cool completely before transferring it to an airtight container. Store it in the refrigerator for up to 5 days.
- Freeze: Pour the tea into ice cube trays and freeze. Use the cubes to chill your tea without watering it down!
- Reheat: Warm it on the stove or in the microwave when you’re ready to enjoy it hot.

Notes
- Use the nutrition card in this recipe as a guideline
- Pineapple center and skin: I used the center and skin from one small pineapple, which weighed a total of 200g. Feel free to adjust the amount to your liking—use more for a stronger flavor or less for a milder tea.
