Bring water to a boil over medium heat. Add the pineapple skin, pineapple center, cinnamon stick, and ginger. Let it simmer for about 15 minutes until the flavors infuse.
1 l water, 200 g pineapple skin and core, 1 tsp or 2 g ginger, 1 cinnamon stick
Carefully strain the tea through a fine mesh sieve.
Transfer the strained pineapple ginger tea to a teapot. For extra presentation and flavor, you can add a few pieces of pineapple skin back to the teapot. Optionally stir in a few tablespoons of honey. Serve hot or cold and enjoy!
4 tbsp or 60 ml honey

Pineapple center and skin: I used the center and skin from one small pineapple, which weighed a total of 200g or 7oz. Feel free to adjust the amount to your liking—use more for a stronger flavor or less for a milder tea.
