Ground pork larb topped with red onions and herbs, served with garlic cloves and fresh vegetables, styled with a sticky rice basket in the background.
Larb moo (ground pork salad)
Larb mo is a spicy Thai pork salad that's especially popular in Isan, the Northeast of Thailand, where I'm from. The pork is cooked and tossed with lime juice, fish sauce, chilies, fresh herbs, and toasted rice powder. That toasted rice gives the salad its lovely nutty aroma and a little crunch.
We serve it with fresh vegetables and sticky rice, usually as part of a larger Thai meal with several dishes shared around the table.

Kai Jeow Moo Sab (Ground Pork Omelette)
A Thai-style omelette with ground pork is one of the simplest ways to make a satisfying meal. The eggs are fried in plenty of oil, which makes them puff up and turn golden around the edges. The pork makes the omelette more filling, so it's perfect for a quick lunch or light dinner. Serve it over jasmine rice with a little chili sauce.

Pad Kra Pao (Holy Basil Stir-Fry)
Anyone who has visited Thailand has probably tried pad kra pao at least once.
Ground pork is stir-fried with garlic, chilies, and holy basil until fragrant and full of flavor. We serve it over jasmine rice, usually with a fried egg on top.
Make sure you use holy basil, not Thai sweet basil, if you can find it. It gives pad kra pao its distinctive peppery, slightly clove-like aroma.

Pro-tip

Most of these recipes work well with ground chicken or beef, too. You can usually swap the pork for another ground meat, but keep an eye on the cooking time. Chicken and beef may cook a little differently, so adjust as needed and make sure the meat is fully cooked.
