Ingredient notes & substitutes

- Bananas โ Any bananas will work here! Thai kluai nam wa is perfect, or you can use larger ones like Cavendish. Just make sure theyโre ripe but still firm, so they hold their shape while frying and donโt turn too mushy.
- Spring roll wrappers โ Use square, thin wheat-based wrappers (not rice paper). If you have larger wrappers, feel free to cut them down to size. Lumpia wrappers are a great option too.
- Oil โ Go with a neutral oil like canola or vegetable oil for deep-frying.
How to make banana spring rolls
Step 1: Slice the bananas. Peel the bananas and slice them in half crosswise. Cut each half again lengthwise. Set aside.

Step 2: Wrap the bananas. Place a spring roll wrapper in front of you like a diamond. Add a piece of banana near the bottom corner, laying it horizontally. Fold the bottom corner up and over the banana, tucking it in snugly. Roll upward to enclose the banana. Fold the left and right sides inward, then continue rolling all the way up. Dab a bit of water on the top corner to seal it closed.

Step 3: Fry until golden. Heat oil in a deep pan over medium heat. Once hot (about 170ยฐC/340ยฐF), fry the spring rolls in batches until theyโre golden and crispy.

Step 4: Drain excess oil. Transfer the fried rolls to a wire rack or paper towel-lined plate to drain and cool slightly. Serve with your favorite toppings!
