Instructions
Prep aromatics:
Mince garlic and roughly chop the cha-om.
Mix eggs:
Crack eggs into a bowl and add cha-om, garlic, fish sauce, oyster sauce, and lime juice. Mix well.
Sauté garlic:
Heat oil in a non-stick pan over medium-high heat. Add garlic and cook until fragrant, about 20 seconds.
Cook omelette:
Pour in the beaten egg mixture and spread evenly.
Flip and finish:
Cook until set, flip, and cook the other side until done. Serve with rice & enjoy!
