Ingredients

  • 1 cup water
  • ¼ cup rice vinegar
  • ½ cup sugar
  • ½ tsp salt
  • 1 Thai chili, finely sliced
  • crushed roasted peanuts, add to taste
  • grated carrot, add to taste

Instructions

  • Combine water, rice vinegar, sugar, and salt in a small saucepan. Bring to a gentle boil over medium heat, stirring until the sugar dissolves.
  • Simmer for 5–7 minutes until slightly thickened. Remove from heat and cool for a few minutes. Stir in chili, then add carrot and peanuts before serving.
