Thai Fried Mussels Recipe (Hoi Tod)

Thai fried mussels and eggs, hoi tod, served over bean sprouts and topped with cilantro and chives.
This is a quick and easy Thai fried mussels recipe, also known as hoi tod. Made with a crispy egg batter, bean sprouts, and simple Thai seasonings.

Ingredients

  • 3 tbsp or 25 g tapioca starch
  • 6 tbsp or 50 g tempura flour
  • a pinch of salt
  • 1 tsp or 3 g white pepper
  • 0.5 tbsp or 7 ml golden mountain sauce, (see notes)
  • 120 ml ice-cold water
  • 100 g mussel meat, (see notes)
  • 5 tbsp or 75 ml oil
  • 2 large eggs
  • 10 g mixed green onions and cilantro
  • 180 g bean sprouts

Instructions

  • In a bowl, combine tapioca starch, tempura flour, salt, white pepper, and golden mountain sauce. Gradually mix in ice-cold water until smooth. Allow this batter to sit for 10 minutes.
  • Mix the mussels into the batter.
  • Heat oil in a flat frying pan over medium heat until hot. Pour the prepared batter into the pan to fry the mussels.
  • Immediately crack eggs over the batter. Gently spread the egg yolks and sprinkle with coriander and green onions. Cook and flip to brown the other side.
  • Continue flipping the omelette until it's golden and crispy on both sides. Once done, remove from your pan.
  • In the same pan, fry the bean sprouts until they're softened to your liking. Once ready, transfer them onto a serving dish and add the fried egg on top. Enjoy!

  • Mussels or oysters - You can make hoi tod with either mussels or oysters.
  • Golden mountain seasoning sauce - Golden mountain sauce is a savory Thai seasoning sauce made from fermented soybeans, salt, and sugar.
