Ingredients

  • 1.1 lb chicken drumsticks
  • 1 tablespoon fish sauce
  • 1 teaspoon white sugar
  • 1 teaspoon white pepper
  • 1 tablespoon tempura flour, cornstarch or rice flour are good substitutes

Instructions

  • Combine fish sauce, white sugar, black pepper and crispy flour in a large mixing bowl.
  • Coat each drumstick with the fish sauce marinade. Marinate in your refrigerator for at least 30 minutes.
  • Preheat the oil to 350°F. Add the chicken drumsticks and fry them for approx 12–15 minutes, or until golden-brown. You can tell if fried chicken drumsticks are done by using a meat thermometer to ensure the internal temperature of the drumsticks reaches at least 165°F, confirming the chicken is fully cooked.
