Make this easy butterfly pea tea with dried or fresh anchan flowers. A naturally blue herbal drink that turns purple with lime or lemon.

Ingredients

  • 15 g butterfly pea flowers, use 2 tbsp (5g) if using dried flowers
  • 500 ml water
  • lime or lemon juice, a squeeze, to taste
  • 1 tbsp honey, add more to taste

Instructions

  • Heat the water in a small pot or teapot until it gently boils. Turn off the heat and add the butterfly pea flowers directly into the hot water.
  • Let the flowers steep for about 5 minutes. You’ll see the water gradually turn a rich blue as the color releases.
  • Add honey to sweeten, and squeeze in some lime or lemon juice if you like. This adds a citrusy note and turns the tea from blue to purple. You can mix it right into the pot or add it when serving. Enjoy!
