What is fried banana chips
This tropical treat is also referred to as banana crisps. The crispy delights are exactly what the name suggests – chips made from fresh and healthy bananas.
We’ll slice’em up super thin, and fry’em up real good for the ultimate crunchy goodness!
And in this recipe, we’re going to give them an extra layer of sweetness by coating them in a layer of sugar. They taste like heaven, and you won’t be able to resist them, trust me.

Which bananas to use
The secret to making the perfect fried banana chips is all in the bananas. For this recipe, we’ll be using green unripe Thai bananas, which fry up perfect and get super crispy. You can find them in an Asian grocery store or supermarket.
I did a few tests, and found that ripe bananas just don’t work as well for this recipe.

- Slice those bananas as thin as you possibly can, trust me, it’s worth the effort. I used a veggie slicer, it sped things up quite a bit, and it works like a charm!
- When it comes to frying these treats, the oil must be HOT! Try frying one slice separately to check if the oil is hot first.
- Using unripe bananas makes it so much easier to slice them.
- Slicing unripe bananas will release some of their “juice”. The juice will stick to your hands and can be a bit messy, so a good piece of advice is to use gloves when slicing the bananas.
- When frying the banana slices, adding them one by one will prevent them from sticking to each other.
- Undercooked chips are no good, it’s better to fry a bit longer than frying too short.

- Bananas – Remember to use unripe, and preferably Thai bananas. An Asian supermarket will surely have them stocked.
- Pandan leaves optional – Fry up some pandan leaves – they’ll add a delicious aroma, even if they don’t add much to the flavor. Optional, but recommended!
- Lime – Before frying, soak the thin banana slices in water and lime.
- Sugar – The sugar will be used to sugar coat the Thai banana slices after frying them.

Squeeze the lime juice into a big bowl filled with water, and add the peels as well. To prevent the bananas from turning brown while frying them and to release the ‘juice’ from the bananas.

Peel the bananas, and add them to the water.

After 3 minutes, slice bananas in very thin slices. Tip: Use a vegetable slicer.

Fill a large wok or skillet with oil. Add the pandan leaves and the banana slices when the oil is HOT. Preferably, add the banana slices 1 by 1.

Fry until the slices are golden brown. Don’t try to make too much at once, work in several batches. Remove with a colander and let excess oil leak out.

To sugar coat, fill a cooking pan with water and heat over medium heat, add sugar.

Cook until sugar dissolves and thickens.

Turn off the heat and add the fried banana slices.

Gently keep stirring and lift the fried banana slices in the air with a spatula. Once you see sugar crystals appearing on the fried banana slices, set aside and let them cool down before eating them.
