Fried mushrooms are a crispy, addictive snack best enjoyed with a dipping sauce. To make them, we’ll prepare a light tempura batter, dip in the mushrooms, and fry until golden and crunchy.
How to enjoy these fried mushrooms
Think of these crispy mushrooms like fries, but even better! Dip them in a hot sauce or sweet chili sauce for spicy enoki mushroom, or use garlic aioli for a kid-friendly, mild option. Their crispy exterior and tender inside make them hard to resist—even picky eaters will love them as much as fried chicken!
And if you don’t like deep-frying, you can pan-fry or oven-roast them instead! Just season with salt, pepper, and a hint of garlic or onion powder, then roast until golden for a lighter, yet still delicious, option.

- Enoki mushrooms – This enoki tempura recipe works well with other mushrooms, too. Try oyster, button, or shiitake mushrooms; just adjust the frying time as needed.
- Tempura flour – This is a light flour mix used to make crispy, airy tempura batter. If you don’t have it, substitute it with a mix of all-purpose flour and a bit of cornstarch for similar crispiness.
- Ice-cold water – Helps create a thin, crispy coating by keeping the batter from becoming too thick or chewy during frying.
- Rosdee seasoning powder – This Thai flavor enhancer is made with salt, MSG, and spices. You can find it on Amazon or substitute it with Knorr bouillon powder.
- White pepper
- Salt
- Oil for deep-frying – Choose an oil with a high smoke point, like vegetable oil or canola oil.
How to fry enoki mushrooms
Note: Avoid washing the mushrooms, as moisture will keep them from crisping up. Instead, gently brush off any dirt with a dry or slightly damp paper towel.
Step 1: Clean the mushrooms. Use a sharp knife to trim 1 to 1.5 inches from the bottom where the stems are clustered and dirty. This leaves tender stems and caps, which you can then slice into evenly sized, easy-to-hold pieces.
Step 2: Prepare the tempura batter. In a mixing bowl, combine tempura flour, white pepper, rosdee seasoning powder, and salt. Slowly add ice-cold water, stirring continuously until the mixture is smooth.
Step 3: Deep-fry. Dip the sliced mushrooms into the batter, then fry the battered enoki mushrooms at 350°F to 375°F (175°C to 190°C) until they’re crisp and golden. Drain excess oil on paper towels and serve hot with your favorite dipping sauce. Enjoy!

For storing: Deep-fried foods are best enjoyed fresh, but if you have leftovers, you can store them in the refrigerator. Let the mushrooms cool completely, then place them in an airtight container with a layer of paper towels at the bottom to absorb excess oil.
For reheating: Preheat your oven to 375°F (190°C). Bake the mushrooms, flipping halfway through, until they’re hot and crispy again.
